Barefoot Bloggers: Smoked Salmon Spread



The second recipe for Barefoot Bloggers this month was the Smoked Salmon Spread from Barefoot Contessa Family Style.

I really like this spread,and it was very easy to make,but I have a confession. I left out the horseradish, because I absolutely hate the taste of it,and put in slightly more lemon juice than the recipe says to do. It's also really nice with some fresh dill on top as well as in the spread. And it definitely tastes better the next day!

I was surprised that the spread was mixed using the mixer and not the food processor,but I guess doing it in the mixer lets it stay slightly chunky.


8 ounces cream cheese, at room temperature
1/2 cup sour cream
1 tablespoon freshly squeezed lemon juice
1 tablespoon minced fresh dill
1 teaspoon prepared horseradish, drained
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 pound (4 ounces) smoked salmon, minced

Cream the cheese in an electric mixer fitted with a paddle attachment until just smooth. Add the sour cream, lemon juice, dill, horseradish, salt, and pepper, and mix. Add the smoked salmon and mix well. Chill and serve with crudites or crackers.

I love that you garnished with dill and added extra lemon, the dill was my favorite part of the recipe! But I would sniff dill while drinking a lemon drop martini if it was legal in my house.

Looks great--I added some extra lemon too--sadly, I made a poor salmon choice and mine was not so great this time. Your spread however looks like it turned out well!

So glad you liked it! It looks wonderful. Oh and just for future reference, I couldn't even taste the miniscule amount of horseradish called for in the recipe. :-)
