Banana Cake

I make this banana cake a lot. It's a totally mixed recipe, partly my Grandmothers, partly Southern Living and partly came about because of a mistake I made one time, leaving an ingredient out, and it worked well, made it better really, so I kept making it the "new" way every time after that.

Ingredients

3 - 5 over ripe bananas
1 1/2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
2 large eggs
1 teaspoon vanilla

Whip the banana's for about 5 minutes. Then add eggs and vanilla

Combine next five dry ingredients in a bowl, then add to the banana mixture.

Pour the batter in a greased and floured pan. Any size will do. This mixture will also fit nicely into 2 loaf pans.

Bake at 350 F for 40 minutes, and then check with a clean dry knife. If it comes out clean it's done. If not give it another 10 minutes and check again.

Icing:

I use a coffee flavoured icing for this cake. It might sound wierd, but it's really delicious.

1 cup of confectioners sugar
Drizzel in some coffee a little at a time and mix until you have the consistency you want, and then ice the cake!

Hi! I really want to try my hand at the banana cake but I noticed that the recipe doesn't call for oil/butter and it just seems too good to be true! So I was wondering if it was left out intentionally. Great blog by the way and thanks in advance!

I made the cake one time and forgot to put the oil in and didn't realise until it was in the oven and it turned out just fine. I think there is something about the bananas that have natural oil when you whip them up. If you want to add oil, you can put in 1/3 cup. I usually use olive, but vegetable is also fine.

This is a great recipe - just tried it out with halved quantities. My 3 year old and I make banana cake all the time, but this is an almost guilt-free version without the butter! Thanks for sharing the recipe, definitely making it again!

Its baking in the oven as I type. I've varied it a little by throwing in a cup of walnuts. I also found some grated dark chocolate in the pantry so I threw that in too :) Fingers crossed!

Amazing banana cake! I just made it a couple of hours ago with a few changes - I added some pecans and chocolate chips. It was really delicious! I was a bit worried before it went into the oven because it didn't seem viscous enough, but it turned out wonderfully!
